~350 g saku tuna (from Kaviale)
~250 g wakame (from Kaviale)
40 g kimchi-flavoured sesame seeds (from Kaviale)
3 tablespoons honey
1 tablespoon soya sauce
1 tablespoon olive oil
1 lime
Cilantro or parsley to taste

Perfectly fried outside and tender inside tuna with a crispy sesame crust. Served with marinated wakame seaweed and fresh honey-lime sauce. A light but filling Asian-inspired dish.
š½ Preparation (2 portions)
1ļøā£ Tuna preparation:
Defrost the tuna in the refrigerator. Scrub under cold running water if necessary. Pat dry with a paper towel.
Brush the tuna with olive oil on all sides.
Dip in a thin layer of sesame seeds (four sides).
2ļøā£Roasting:
Heat a frying pan. Fry the tuna on each side for 20-30 seconds – until the protein has curdled to a depth of about 2mm.
Immediately remove the tuna to the fridge to cool.
3ļøā£Dressing:
Whisk together the honey, soy sauce, olive oil and juice of half a lime with a whisk. Add as much cold water as the resulting sauce.
Stir in the finely chopped cilantro or parsley.
4ļøā£Serving:
Slice the cooled tuna into thin slices.
Place 4 slices on each plate. Arrange the wakame next to it.
Drizzle the tuna with the dressing and serve immediately.
